    ...so why can't I just project again a good screen and video?

    I've seen this done before and the quality is neglegable. My goal is to get it to CD/DVD for massive editing.

    you can do this just fine, but you'll get a little flicker. that's all. your projector, if like most super8 projectors, has a three-blade shutter. to get a flicker-free transfer with a three blade shutter your projector must run 20fps.
    most super8 projectors run 18fps. but there are higher-end models that run 18/24fps, but what you want is the sort that has a continually variable frame rate via a rheostat. this way, you can adjust the projection speed to eliminate the flicker as you view the footage through the viewfinder.
    the drawback is that if the footage is shot @ 24fps, your the respective motion of objects within the frame will be slightly slower @ 20fps and if the footage is shot at 18fps, the motion will seem slightly faster.
    if none of these issues are of concern to you, go for it. you have nothing to lose, right?
